Chicken and Rice Soup My latest favorite supper option (except that Prizing House meal I picked up last night)! This is so yummy and I love a good soup on cold nights. Directions:
I sautéed an onion (chopped) in 1 tsp. EVOO. I added in the chicken meat (pulled apart). Once hot, I added chicken broth (I prefer the reduced-sodium chicken broth) and the liquid from the rotisserie chicken bag and a cup of water. Healthy Eat: Breakfast
I'm loving this idea for a quick breakfast on-the-go! I sprayed a muffin tin with non-stick spray and filled it with spinach, mushrooms and one whole egg. You could add peppers, a little cheese or just use egg whites. I cooked them for 15 minutes at 350 degrees. They popped right out and were so good! I kept the leftovers in a Tupperware container in the fridge. Each morning, I sliced one in half, heated it in the microwave and placed it on a slice of toasted Ezekiel! #Health
