Chicken and Rice Soup

My latest favorite supper option (except that Prizing House meal I picked up last night)! This is so yummy and I love a good soup on cold nights.

Directions: I sautéed an onion (chopped) in 1 tsp. EVOO. I added in the chicken meat (pulled apart). Once hot, I added chicken broth (I prefer the reduced-sodium chicken broth) and the liquid from the rotisserie chicken bag and a cup of water. I then added sliced carrots, black pepper, 1 Tbs garlic powder and 1/2 Tbs parsley and 1/2 Tbs butter. You can add in more spices, if you like. The final ingredient was the Uncle Ben's brown rice (already cooked). I let it simmer on the stove on low for about 15 minutes. Next time I'm going to use 2 chickens and 2 bags of rice and have supper and leftovers for some lunches.
